Oaxaca has become a rather sophisticated dining town with restaurants serving both traditional and updated versions of the world famous Oaxacan regional cuisine - which is quite vast. Oaxaca has been featured in magazines such as Food & Wine, Savour, Gourmet, Travel & Leisure and others. Food & Wine® magazine called the annual Food of the Gods Festival in Oaxaca "the eating event of the month."
Some restaurants come and go, of course, but by and large, restaurants enjoy a long life in Oaxaca. People in the know' are often looking for very specific dishes that they have heard rumors about - like ones containing the chile chilcostle or the rare chile canario used by Zapotec cooks.

A simple homemade tamale bought from a vendor while you're out shopping is a quick delight or you might enjoy a nouvelle, eight course meal utilizing the best of Oaxacan ingredients for an evening out.
And we can tell you, from personal experience, that a baked red snapper pulled out of the wood burning adobe-oven and brought to your table accompanied by a bottle of ice-cold Mexican beer is not a bad way to spend part of the afternoon out in a garden in the city of Oaxaca.
